Flavour: On the palate tight, sinewy tannins wrap around tangy sour cherries, raspberries and strawberries, evolving to darker fruit, and going savoury at the edges. Medium bodied yet with a layered density of fruit. Red and black berries unroll to a juicy pomegranate finish, dusted with a hint of cacao.

Flavour: The palate is red-fruited and generous, plumped with raspberries, mulberries and sappy cherries; then lifted on the mid-palate with refreshing watermelon verve. Keenly balanced with a lemony acidity, all that beautiful, bright fruit is cradled in a fine-boned structure imbued from old oak ageing.

Winemaking: White Sparkling. Grapes are gently pressed to achieve minimal colour extraction. Vinification and sparkling process takes place in the total absence of oxygen. The second fermentation takes place in the bottle with a long yeast refinement (64 months). Disgorgement carried out in August 2021. Not dosed.

Aroma: Fruity with floral references and evident pastry notes due to the long stay on the yeasts in the bottle.
Flavour: Fresh, with very fine bubbles. Intense, complex, harmonious with a finish that recalls the olfactory notes.
